lemonade ice cream recipe.

Each month for the monthly spread, we invite a guest chef or caterer to write a menu for a special occasion.  For July, our foodie friend Terri created a yummy lineup for the 4th that included a lemonade ice cream pie.  Sound good?  It tastes even better.

With the weather heating up,  I couldn’t help but make a slightly simpler version and share it with you…. (happy dance).

(try wrapping the bottom of cones in wax paper to help with drips… worked like a charm.)

INGREDIENTS:

1 container (1.5 QT) favorite vanilla ice cream, 1 can (12 oz.) favorite frozen lemonade from concentrate (we used raspberry lemonade)

DIRECTIONS:

1.  Set ice cream and lemonade out to thaw.  Allow ice cream to thaw until soft, but not melted.  Let lemonade thaw completely.

2.  Scoop ice cream into a large bowl.  Pour 1/2 of the lemonade over the ice cream and mix together well.  Try a bite and add more lemonade to taste (we used 3/4 can).

3.  Cover bowl and put in freezer to harden (we did this overnight, but a few hours would probably be enough).

4.  Scoop into bowls or cones and serve!

 

I think we’ve discovered a new summer favorite that might just rival s’mores.  If that’s even possible.
