homemade pancake mix recipe.

Every time I make something that comes in a can, jar, box or bag at the grocery store, from scratch, I’m amazed at how easy it is and delicious it turns out.  It also makes me feel like I live on a farm… and farms are cool.

Making pancakes from scratch is extra easy because you make a large batch of mix all at once and then use part of it to make the pancake batter.  Just like you would a bag of krusteaz or bisquick, but without the extra ingredients that are impossible to pronounce.

If you would like to join us on our make-believe farm (please say yes!), here’s a recipe my mom and I whipped up:

HOMEMADE PANCAKE MIX (makes about 5 batches)
6 cups all-purpose flour
2 cups whole wheat flour (NOTE: you can substitute for all-purpose flour)
2 cups powdered milk
3/4 cup sugar
1/4 cup baking powder
1 tablespoon salt

1. Mix all ingredients together well and store in an airtight container.  Then use the following recipe to make the batter.

PANCAKE BATTER
2.5 cups homemade pancake mix
2 large eggs
water (about 2 cups)
1/2 teaspoon vanilla extract (optional, but delicious)
2 tablespoons melted butter or oil

1. Whisk together all ingredients, adding water until combined but slightly lumpy!

2. Heat greased skillet or fry pan over medium heat.  Pour about 1/4 cup batter per pancake and cook until golden brown, flipping once.

    Hi Rae (& Gamma Jane)– I make my kids pancakes several times a week & have had a hard time fine tuning a recipe to taste/feel like my good ol’ Hungry Jack Complete. I can’t wait to try this! Thanks!

    Thanks for this!!! We’re moving over to zero processed foods for our family and it’s things like this that I miss the most. The kids love pancakes and this will be awesome when I don’t have time to make them completely from scratch. Love it!

    Love the idea! I love to make from scratch, but lets face it, we don’t always have time. So this is perfect. Question, is the batter very sweet? Can I cut some of the powder sugar without messing up the consistency?

    Just wondering if you have any suggestions for substituting soy or rice milk. Would love to try this but have dairy allergies.

      hi allison, i would suggest leaving the powdered milk out of the recipe and then adding soy or rice milk instead of water (or half and half) when mixing the batter. hope that makes sense! xo

    Do you think this recipe would work without adding eggs? I make my pancakes for my baby girl who can’t have eggs yet. If not, do you have ideas for how to alter it so you could do this without eggs? Thanks!

      hi mari! i assume it would work well as a waffle mix, but we haven’t tried it as our waffle iron is on the fritz :) xo

    I promised my kids pancakes, then realized I was almost out of store bought mix. This was the first recipe that popped up when I searched “pancake mix” on Pinterest. I will NEVER buy store bought pancake mix ever again!!!

    I have got to try this recipe out! I have a small problem though; I am living in a temporary beach cottage and my kitchen is tiny!! Yes, I sacrificed a great kitchen for a beautiful beach view…but only for a Short time LOL. Do you have recipe for maybe 1/2 of the 5 batches…more like 2 or 2 1/2 batches? Also, what is the pancake yield per batch? Thank you so much! :)

      oh jean, i wish i could visit you at your beach cottage! sounds so lovely, small kitchen and all :) i would try dividing the ingredients in half so it’s not so bulky…. you should get about 12 pancakes for two cups of the mix. hope that answers your questions!
